White Chocolate Vanilla Bread Pudding

Yield: 8 servings (+.-)

Ingredients:

  • 1 quart Diced White Bread (Challah Bread is the best for this)
  • 1/2 cup Melted Butter
  • 12 Eggs
  • 2 cup Sugar
  • 1 T Cinnamon
  • 1 t Vanilla
  • 4 cup Milk
  • 1 cup White Chocolate Chips

Method:

  • Cube Bread into 1/2 inch squares, toss in melted butter and toast until light golden brown, cool
  • Mix milk, sugar, cinnamon and vanilla in saucepan
  • Place on stove and steep until all sugar is dissolved, stirring occasionally
  • Beat all eggs together in bowl
  • Temper eggs with scalded milk mixture
  • Add eggs to milk and whisk thoroughly and cool
  • Toss toasted bread in the “custard”.
  • Gently mix in white chocolate
  • Place in buttered 9×12 baking pan and let sit 20 minutes to absorb liquid
  • Bake in a preheated 350 degree oven for 45 minutes or until set
  • Slice to appropriate sizes, serve with a caramel sauce and vanilla ice cream
  • Can be gently reheated in warm oven or lightly microwaved
