Humans of Chestnut – Taylor Rice

My name is Taylor. I’m a bartender and have been with Chestnut for around 2.5 years.

What’s the best meal you’ve had at Chestnut?
We had a sheepshead fish dish, about a year ago, that changed my opinion of white fish. It was real simple. Seared fish, fingerling coins, some beans, and a white wine mustard sauce. Boom, now I like white fish.

What kitchen tool could you not live without?
I guess a knife. There isn’t much you can make without a knife. If you mean gadget… a Sous vide. I’m not very good with it, but in theory, it can work wonders.

If you could only have one meal for the rest of your life, what would it be?
Salad with quinoa, goat cheese, chicken, and pickled veg. I stole the base idea from a Chestnut salad. I’ve been eating it for like 4 months and I still like it. That’s gotta be a good sign.

What’s the worst meal you’ve ever had?
I had a meatloaf and mashed potatoes meal with crispy onions at a small time brewery. It was so salty I lost my sense of taste halfway through the plate.

What’s your favorite food movie?
Chef. That’s a good movie from several angles.

What is the funniest thing that has happened to you recently?
It was at someone else’s expense… I’m trying to look respectable here.

What’s the last thing you watched on TV and why did you choose to watch it?
Game of Thrones. Everyone is watching it.

How do you spend your time outside of work?
I’m building a tiny house. That takes up a lot of time. I’ve been doing Jiu-Jitsu for more than a year now. That’s my favorite hobby. I take a lot of walks with my girlfriend and dog. That’s our version of family time.

Anything else you’d like to share about you?
Sometimes people ask me what sign I am. I don’t think there are personality traits that develop based on what month you were born. However, I always like the reaction I get when I tell people I’m a Gemini.
