Humans of Chestnut: Brooke Lofthouse (December 2023)

Meet Brook Lofthouse, Chestnut’s Humans of the Month.

This months “Humans of” is Brooke Lofthouse, a front of house server for both Chestnut and Corner Kitchen. We had the opportunity to sit down with Brooke and learn more about her.


What’s your sign?

I’m an Aquarius, a double Aquarius. 

Are you a cat or dog person?

I’m a cat person, for sure. Dogs are too much work. 

What’s your position here?

I am a server, so I’m a front of the house server for Chestnut. 

How long have you worked here?

I’ve been here just shy of a year. My one-year anniversary is coming up soon. 

Are you from Asheville?

No, I’m from Idaho. I’m from southeast Idaho, right where the potato fields meet the Tetons. So this is very different for me. 

Do you like it here?

Asheville is really cool. It’s the biggest city I’ve ever lived in, and so I’m still getting used to it, but it’s a really cool and fun place to be. 

What’s your favorite thing to do in Asheville, NC?

I do love the shops, and I love going around the galleries. But I find myself enjoying the nature aspects of Asheville. Hiking and kayaking, rafting too.  

What’s your favorite dish at Chestnut?

The Shrimp n Grits. The peppercorn cream sauce and the bacon, it’s a home run. 

What brings you the most joy in life?

I love being outside with my family friends. I’m an outside person, for sure. 

Do you have family here?

No. I’m here to be closer to my fiance’s family. 

How long have you and your fiance been together?

Six years. We met here. I came out here as a raft guide. We were both working raft guides in 2013, just outside of the Smokies so this was the closest place. I’ve been all over the U.S. doing whitewater rafting expeditions, but we finally put down some roots here. 

What would a perfect day look like to you?

Probably brunch to start us out, and then maybe something outside, either peaceful or adrenaline seeking, with my friends. 

What’s something on your bucket list?

Oh, I want to see the orangutans in Borneo. I think they’re so cool. 

Do you have any dreams or long-term goals?

I would love to be proficient in herbal medicine or own my own bed and breakfast someday. 

Do you still go rafting?

Yeah, we pretty much go once or twice a week. There are lots of rivers around here. The summer has been tricky because we haven’t had any water. We go in the Smokies or all around here. We were just recently in the Tallulah Gorge for some whitewater releases. Asheville is a great place to be for whitewater and for great food.
