What’s the best meal you’ve had at Chestnut?
Cast iron seared creole seared catfish! Carolina Dirty Rice, Jalapeno-Bacon Corn Succotash, Fried Okra, Lusty Monk Mustard Beurre Blanc. As a relative Northerner, this is about as southern as my taste buds have gotten. I probably had this 6 times when it was featured on our August menu last year. I am…not proud.

What kitchen tool could you not live without?
Considering I’m always the simpleton when I step in our kitchen, I’m gonna say a spoon

If you could only have one meal for the rest of your life, what would it be?
I think your traditional Thanksgiving dinner; sliced, oven roasted turkey, mashed potatoes, peas, green bean casserole, a silo full of gravy, and STOVE TOP stuffing. Yes, STOVE TOP. And another thing; I will NEVER call it “dressing”.

What’s the worst meal you’ve ever had?
I ordered a BLT from a restaurant at a certain tourist trap at the border of NC and SC. This is gonna be very hard to believe, but it was bad. It was very bad. But the fireworks I purchased were exquisite

What’s your favorite food movie?
Gonna drop three on ya here; Big Night (1996), Dinner Rush (2000), Chef (2014)

What is the funniest thing that has happened to you recently?
On the way back from Atlanta on St. Patrick’s Day, my buddy and I randomly stopped for lunch at a….Hawaiian BBQ diner in Northern Georgia. The place was empty, but enveloped by massive hornets (who we later decided ran the place), and the pitcher of green beer we ordered came with a scoop of ice in it. Everything was so….other dimensional, it felt like a waking dream with absolutely no meaning but to make us laugh. We barely escaped with our lives.

What’s the last thing you watched on TV and why did you choose to watch it?
Homeland. Because the security of the nation is in Carrie’s hands, and I’m worried she’s not taking her meds. Oh, Carrie…
