My name is Juan and I bartend at Chestnut!
How long have you worked for Chestnut?
Just about 7 months.
What’s the best meal you’ve had at Chestnut?
It’s tough choosing just one. A dish that’s been on our menu that, across menu changes has evolved but stayed consistently delicious is the trout. Whether bright and acid-forward like it was a few months back, to its redesign to be a richer, warmer, earthier offering, you can never go wrong.
What bar tool tool could you not live without?
I own a Yarai mixing glass that’s just a delight to mix in. Stirring may not be as much of a show as shaking, but with the right mixing glass and spoon it’s just so satisfying!
If you could only have one meal (or drink) for the rest of your life, what would it be?
Rhum Agricole Daiquiri. Easily. The classic build with rhum, lime, and just enough sugar to balance the brightness is a weakness of mine. I could never get tired of it.
What’s the worst meal you’ve ever had?
Anything I’ve ever had on a plane or at the airport. I’m convinced it’s all highly textured Play-doh.
What’s your favorite food movie? (example, Julie and Julia)
Not sure I’ve seen any food movies, but the show Chef’s Table is essentially an extremely well shot, cinematic depiction of cuisine. I. Love. That. Show.
What is the funniest thing that has happened to you recently?
I’m getting old and forgetful, and the process of leaving home (or work…or friends’ houses….or….anywhere) takes me a couple tries. First for the keys, then the wallet, then my glasses…and it’s hilarious every time!
What’s the last thing you watched on TV and why did you choose to watch it?
Daredevil. I really like these “superhero with very human flaws,” gritty shows that have come out. They can be a bit too dark and gritty sometimes, so I cleanse my palate with Parks & Rec.
How do you spend your time outside of work?
I enjoy staying active, which means anything from going to the gym to hiking. I also have a burning passion for everything wine related, so I spend a lot of my time reading and tasting, and, sometimes if schedules match, I’ll get a few co-workers together and share a bit of what I know. I find it infinitely gratifying!
Anything else you’d like to share about you?
Seriously: say the word ‘wine’ around me and watch an adult turn into an overly excitable child. I realize that sounds wrong on some levels, but really, come to the bar, have a glass, and let’s chat!
